Chapel Hill police chief shares secret family chili recipe

Chapel Hill Police Chief Chris Blue is known in the community for cracking down on crime. But one thing people may not know about Blue is his secret family chili recipe.

On Jan. 26, Blue entered his signature dish into the first annual Chili Cook-Off hosted by The Farm, UNC’s Faculty-Staff Recreation Association. The event challenged participants to enter if they thought they had the “best chili on this side of the Mississippi.”

Each contestant had to prepare a pot of chili large enough to feed 60 to 70 people. Attendees paid $5 to taste and judge each entry.

Stakes were high, with the top prize being a $100 Visa gift card.

Blue won second-place in the cook-off.

Here is Chief Blue’s family recipe:
1 pound of ground beef, 80/20 cooked down
1 turkey sausage
2 medium cook chicken breasts
1 large ground onion
1 clove of garlic
1/4 pound of black beans
1/4 pound of kidney beans
1/4 pound of great northern beans
1 cup of corn
1 can of tomato paste
1 chopped tomato
dash of chili powder and chili flakes
Secret ingredient: 1 box of frozen spinach

Let the ingredients simmer in a crock pot for about an hour.

“The flavors meld together nicely,” Blue said.
