Recipe of the week: bacon, egg, and cheese frittata

Yes, I know that many of you have probably never heard of a frittata. It sound a little intimidating, right? Well, you’re wrong. Our good friends at Wikipedia say a frittata is an egg-based dish similar to an omelet or quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. Basically, it’s baked eggs with some other stuff thrown in — not intimidating at all! We can thank UNC Dining Services for their generous “donation” of ingredients for this recipe. All you will technically have to buy are the eggs, which can be bought at the Ram’s Head Market for about $2.

This would be the perfect thing to make with your friends for a Sunday morning brunch.

Ingredients:

6-8 eggs
1 cup milk
3/4 – 1 cup chopped bacon (found in the salad bar section of the dining hall)
1 1/2 cups cheddar and mozzarella cheese (salad bar)
1-2 teaspoons salt
1/2 teaspoon pepper
butter

You will also need to get a shallow baking dish of any size, a fork, an oven mitt, and a bowl. These can be found through the enhancements program at your dorm.

First off, preheat the oven to 350 degrees. Next, grease your pan with the butter so that the eggs won’t stick.
































Crack the eggs (with one hard if you’re daring). Add in the the milk and the salt and pepper and mix them all together with a fork.




















Pour the egg mix into the shallow baking dish you greased with butter. Sprinkle the bacon bits on top of the egg. Then put the cheddar and mozzarella cheese on top.


























Bake in the oven for 25-35 minutes, depending on the size of the dish.
